For 40 years, Domenico De Marco, the proprietor of this Brooklyn pizza giant, has been famed for his meticulous –- some would say maniacal –- attention to detail (word has it that he hardly ever takes a day off, and doesn’t usually let anyone else handle the pizzamaking), which adds up to a joy for the palate.

Made with De Marco’s secret-recipe sauce (you can buy it by the pint) and blend of three cheeses (including a fresh buffalo mozzarella he reportedly imports from his hometown in Italy), DiFara has become a major player in the “Best of New York” argument in recent years (an offshoot pizzeria, De Marco’s, opened recently on Houston Street in Manhattan to much acclaim).

But that rise in popularity has led to a crush of foodies, and DiFara is known for waits of 45 minutes to 2 hours. Though DiFara doesn’t serve beer or wine, you’re welcome to bring your own, which is always a good way to pass the time until that first bite hits your lips.

In one fan's ("The Sticker Dude") own words:

Popping, crackling Golden Bertolli! kisses the fresh dough
Tomatoes from Salerno
Buffalo mozzarella from Caserta,
and Fior di Latte,
and Parmigiano Reggiano
Mysterious burnt bubbles --
hissing virgin olive oil,
slow & steady
spreading dough for the Grand Experiment
from early, early in the day We stand -- Papa, the kids
and a million craving palates lining Ave. J --
for Brooklyn/Italian Pizza as an Art
'til the moon waxes & wanes and
the Mozzarella Master retires at midnight
with a vintage bottle of Amarone della Valpolicella

You will definitely wait for your slices here even in the middle of the week. But it is well worth the trip for a slice. The owner's hands are so caloused that he pulls the scalding hot pans out without mits or a pizza paddle. Far and above the best and most unique pizza experience in NYC. And I lived a block from Grimaldi's.

For me, his pizza is the winner for best tasting pizza. I am willing to pay an extra $5. for a pie. The taste is so unique and wonderful. As to L & B it is a great pizza, but falls short of the best. I have had pizzas in the 'neighborhood" that are as good as L & B.

I wish that other trusted family members could take part in the preparation. Some good management of the crowd could make the place more money. Even if one person is there to just handle the money or fold the boxes.
